The respect of these specifications is rigorously enforced by the competent authorities.

The AOP is the European transcription of the AOC which you will henceforth find on all the supports of communication of Beaufort.

Created in 1935, the Institut National des Appellations d'Origine or I.N.A.O., oversees the management of the A.O.C. in all sectors of the food-processing industry. It is the Institute which advises on the demands made by the interprofessional associations for the recognition of a product under an A.O.C. Generally, it also carries out the monitoring process.

Each producer, through the signature on an aptitude declaration, promises to respect the specifications of the Beaufort appellation. Officials from the I.N.A.O. are called upon to monitor milk production as well as the transformation and maturing of the cheeses. If a producer does not respect the regulations, use of the Appellation d'Origine could be withdrawn.

Taste and composition qualities are also regularly monitored by an Approval commission made up of professionals, mostly farmers, who judge the cheese in complete anonymity.

Officials from the D.D.C.C.R.F. (Consumption/Fraud Office) carry out monitoring concerning distribution
